Tracking, one-of-a-kind pieces, low-stock alerts, and when stock is reserved.

The Inventory tab of a variant decides what the storefront says about availability.
When stock is reserved
Inventory is reserved when the order is placed, not when it is paid or shipped.
One of a kind
For pieces that exist only once — a painting, a handmade piece of jewellery — tick One of a kind on the Inventory tab.
Stock behaves differently
Stock is always tracked, backorder is not offered, and the quantity can only be 1 (available) or 0 (sold).
The product page changes
No −/+ quantity stepper is shown — the buy row is just the button. (A subscription has no stepper either.)
Sold reads as "Sold", not "Out of Stock"
Product cards show a Sold badge in the shop's language, the product page
says Sold with the buy button disabled, and the structured data reports
SoldOut to search engines.
It stays visible as portfolio
A sold one-of-a-kind piece deliberately stays in the public shop unless you unpublish or archive it. The review of a sold piece is often what sells the next one.
One-of-a-kind items are left out of the dashboard's low-stock and out-of-stock warnings entirely — one on hand is their normal state, and once sold they cannot be restocked. Sold is its own box in the product list's status filter.
Low-stock alerts
Two levels, and the more specific one wins:

You get one email per shortage, sent the moment a sale drops available stock to the threshold or below. It is re-armed when you restock or change the threshold — so a slow-selling product does not mail you every day.
One-of-a-kind items never trigger it.
The email needs the Low stock notification switched on under Settings → Notifications. See Emails and notifications.
What visitors see
The stock line under the price on a product card — "In stock", "Only 1 left", "Sold out" — is drawn by the block's Card Show Stock toggle in its Display section, so you can hide it per block.
